Goldwater's Mercantile Jelly Thumbprint Cookies

Create a new holiday tradition with these delightful thumbprint cookies featuring Goldwater’s Mercantile Jellies. Choose from Margarita, Jalapeño, Prickly Pear, or Wild Raspberry jellies to add a burst of unique flavor to each cookie.

Ingredients:

  • 1 1/2 cups Butter, softened
  • 2 cups White sugar
  • 4 Eggs
  • 1 teaspoon Vanilla extract
  • 5 cups All-purpose flour
  • 2 teaspoons Baking powder
  • 1 teaspoon Salt
  • 1/2 cup Goldwater’s Mercantile Jellies (Margarita, Jalapeño, Prickly Pear, or Wild Raspberry)

Instructions:

    • In a large bowl, cream together the butter and sugar until smooth.
    • Beat in the eggs and vanilla.
    • Stir in the flour, baking powder, and salt.
    • Cover and chill the dough for at least one hour (or overnight) for best results.
  • Preheat and Roll:

    • Preheat your oven to 400ºF.
    • Roll out the dough on a floured surface to a thickness of approximately 1/4 to 1/2 inch.
    • Cut into shapes using any cookie cutter.
    • Place cookies 1 inch apart on ungreased cookie sheets.
  • Add Jelly:

    • Using a spoon, make an indent in the middle of each cookie like a thumbprint.
    • Add a dollop of your favorite Goldwater’s Mercantile Jelly to each indent, or make a variety using all the different jellies.
  • Bake and Cool:

    • Bake in the preheated oven for 6 to 8 minutes, or until the edges are lightly golden.
    • Allow cookies to cool completely on a wire rack.
