Goldwater's Mercantile Jelly Thumbprint Cookies

Create a new holiday tradition with these delightful thumbprint cookies featuring Goldwater’s Mercantile Jellies. Choose from Margarita, Jalapeño, Prickly Pear, or Wild Raspberry jellies to add a burst of unique flavor to each cookie.
Ingredients:
- 1 1/2 cups Butter, softened
- 2 cups White sugar
- 4 Eggs
- 1 teaspoon Vanilla extract
- 5 cups All-purpose flour
- 2 teaspoons Baking powder
- 1 teaspoon Salt
- 1/2 cup Goldwater’s Mercantile Jellies (Margarita, Jalapeño, Prickly Pear, or Wild Raspberry)
Instructions:
- In a large bowl, cream together the butter and sugar until smooth.
- Beat in the eggs and vanilla.
- Stir in the flour, baking powder, and salt.
- Cover and chill the dough for at least one hour (or overnight) for best results.

Preheat and Roll:
- Preheat your oven to 400ºF.
- Roll out the dough on a floured surface to a thickness of approximately 1/4 to 1/2 inch.
- Cut into shapes using any cookie cutter.
- Place cookies 1 inch apart on ungreased cookie sheets.

Add Jelly:
- Using a spoon, make an indent in the middle of each cookie like a thumbprint.
- Add a dollop of your favorite Goldwater’s Mercantile Jelly to each indent, or make a variety using all the different jellies.

Bake and Cool:
- Bake in the preheated oven for 6 to 8 minutes, or until the edges are lightly golden.
- Allow cookies to cool completely on a wire rack.
