Ingredients:
- 3 large Eggs
- 1 cup Sugar
- 1/3 cup Water
- 1 1/2 teaspoons Vanilla extract
- 3/4 cup All-purpose flour
- 1 teaspoon Baking powder
- 1/4 teaspoon Salt
- Confectioners' sugar, for sprinkling
- 3/4 cup Goldwater’s Mercantile Wild Raspberry Jam

- Standard Jelly Roll Pan
- Parchment Paper

Instructions:

Preheat the Oven:
- Preheat your oven to 375°F.

Prepare the Pan:
- Line a jelly roll pan with parchment or waxed paper, and grease or spray it lightly.

Make the Batter:
- Beat the eggs for 5 minutes until thick and pale.
- Gradually beat in the granulated sugar.
- Using a low mixer speed, slowly add the water and vanilla extract.
- Add the flour, baking powder, and salt, beating until smooth.

Bake the Cake:
- Pour the batter into the prepared jelly roll pan, spreading it evenly to the corners.
- Bake for 12 to 15 minutes, or until a toothpick inserted in the center comes out clean.

Roll the Cake:
- Carefully remove the cake from the pan and place it onto a clean cooking cloth or tea towel. Remove the parchment paper.
- Sprinkle the cake with confectioners' sugar.
- Starting from the short end, gently roll the cake with the towel and let it cool on a wire rack for 30-35 minutes.

- Once cooled, unroll the cake and remove the towel.

- Re-roll the cake without the towel and sprinkle the top with confectioners' sugar.
